Chicken Noodle is a true comfort food. Which is why you might not suspect that it packs so many health benefits!

For example:

  • Multiple trace minerals and their nutritional buddies, pulled directly from bones and still in food matrix form, making them readily available for absorption into your own body.

Way Better Than Campbell's

As a child I loved Campbell's Chicken Noodle Soup. It was so... chickeny! Every time I caught a cold, Mama served me a big bowl of Campbell's chicken soup and a steaming cup of black tea with cream and sugar. 

Now that I raise dual purpose American Bresse chickens, I wanted to craft a chicken noodle soup embodying the vibe of the familiar chicken noodle soup of my childhood, a minimalist soup that wouldn't for a minute minimize the delicious taste or the health benefits that chicken soup is known for worldwide.

Well, I pulled it off. This soup is simple, but there is nothing "minimalist" about the flavor or nutrient load, because I used homemade chicken broth, which is thick and lusty and undiluted by any other liquid. To the broth I added the potatoes, carrots, onions, and spices - salt, pepper, garlic, and a dusting of thyme. 

This might be the BEST chicken noodle soup I have ever tasted. Sorry, Campbell's!

Homemade Chicken Noodle Soup Recipe

Chicken Noodle Soup Ingredients:

  • Base: 1 - 2 quarts homemade chicken broth
  • 1-2 cups finely cubed cooked chicken
  • 1/8 - 1/4 cup powdered dehydrated potatoes. Optional: 2 potatoes, cooked and whipped.
  • 1/2 - 1 cup finely cubed raw carrots (approx. ¼” cubes)
  • 1/2 - 1 medium onion, finely chopped. Optional: Add or substitute 1 cup leeks.
  • 1 - 1 1/2 tsp salt, 1/2 tsp pepper
  • 3 - 5 garlic cloves, minced
  • Optional: 1 stalk finely chopped celery
  • Optional: 1/2 tsp – 1 tsp powdered thyme. Optional: Substitute poultry seasoning.
  • 4 - 8 ounces spaghetti noodles snapped into thirds. Optional: Substitute egg noodles.

Directions:

  • Add broth to a large soup pot and turn on the heat.
  • Fill a separate pot with water. (This will be for cooking the noodles.) Add salt and a dollop of olive oil, and bring to a boil. 
  • To the broth pot add the cubed chicken, carrots, onions, powdered potatoes, S&P, crushed garlic, and if desired, optional celery and seasoning. Allow soup to come to a boil; reduce heat and simmer for 30 minutes, or until vegetables are cooked and soft.

Cook the noodles: As the soup is simmering, the water for the noodles will come to a boil.

  • Add noodles to the pot of boiling water. Follow cooking directions on the noodle package - cook for 12 minutes for egg noodles, or 10 minutes for spaghetti noodles, stirring from time to time.
  • When the noodles are cooked, test the carrots in the soup for doneness with a fork; they should be soft but not mushy.
  • When veggies are soft, add the noodles to the simmering chicken noodle soup, and mix well.
  • Turn off the heat, and allow the soup to rest for 5 minutes so the noodles can absorb the soup flavors and soften slightly more.


Your pot of chicken noodle soup should serve 6-10 people.

Chicken Soup Around the World

According to Wikipedia, many cultures love to serve and eat chicken soup, not always with noodles. Many variations on the chicken soup theme can be found around the world. In too many countries to be coincidental, chicken soup is viewed as having medicinal effects for mild illnesses like flu or Kovid. 

Check out these countries that enjoy chicken stew or soup, prepared in their local styles:

  • China: The Chinese often base a variety of soups on chicken broth, using geriatric hens, ginger, soy sauce ginseng, sesame oil, and more.

  • Colombia: Colombians like to eat chicken soups that are high in starches such as potatoes, plantain, and/or cassava. But not exclusively so. The "soup hen" is paired with multiple vegetables along with the starches; such soup is usually the entire meal in the bowl.

  • Brazil and Portugal: Canja de galinha is chicken broth with added rice and shredded chicken. It has a healing reputation in Brazil, especially for mild colds.

  • Mexico: Mexicans eat caldo de pollo, which is a chunky soup with whole pieces of chicken and vegetables cut in larger chunks. They also serve the well-beloved tortilla soup, and the latino caldo tlalpeno, with avocado, cheese, and chipotle chile. Mmm!

  • Peru: Aguadito de pollo is a thick stew of chicken, cilantro, veggies, and the typical Peruvian spices. 

  • Jewish Poles and Russians: Jewish babushkas (grandmothers) are well known for serving a hearty chicken soup to ailing family members, which is how chicken soup came to be nicknamed "yiddish penicillin." To chicken bone broth, they add dumplings, matzah balls, or egg noodles.

  • Ghana: For Ghanaian "Chicken Light Soup," the cook prepares a tomato-onion-pepper mixture and then cooks the chicken in it. 

  • Greece: Grecians make a thick-textured chicken broth soup with added eggs and rice or pasta. This is the traditional remedy for several ailments.

  • Germany: The Germans also utilize their "soup hens," large older hens from which they make broth, and add vegetables, spices, and small noodles. If the soup ends up being thick, they just call it hen stew.

So many other countries love their chicken soup! Denmark, France, Hungary, Indonesia, Italy, Japan, Korea, Philippines, Poland, Romania, Moldova, Taiwan, and UK are other nations specifically mentioned that have a chicken soup recipe common to their country or region.
