Just a heads up - in today's society, the Cornish Cross chicken is everywhere, from the grocery store to 99% of all restaurants. Our dear readers can find a plethora of recipes elsewhere for cooking store-bought chickens.
Because the Cornish Cross is so ubiquitous, the world has largely forgotten how to cook actual heritage chickens!
Here at the Ambresse website, we at least knew that American Bresse and other heritage breeds of meat chickens cannot be cooked like a "regular" chicken. Perhaps you're discovering this as well.
It took us months of research, trial and error, to learn how best to cook our home-grown heritage meat chickens. The methods we learned are here: How to Cook Bresse Chicken.

Rendered chicken fat is known as Schmaltz.
Schmaltz renders into a soft yet solid yellow fat that curiously remains a bit soft even in the refrigerator. You can pull out the jar and easily scoop out the amount of schmaltz you need.
With the drawbacks of seed oils coming into focus, animal fats are now being recognized as healthy, with their high smoke point, and no trans-fats. American Bresse chicken keepers that finish their meat birds will likely find plenty of chicken fat that can be rendered into schmaltz.
And in fact, any older chickens of any heritage breed, especially hens, will likely present you with a good amount of fat.
Schmaltz is healthy. Use it in place of fats in recipes. Use it to grease pans or cooking sheets. The only flavor it cannot replace is butter, though it does come much closer to a buttery flavor than any other fat (other than butter, of course).
